Summer wouldn’t be complete without potato salad. It’s a summer staple at picnic’s, barbecue’s, and on days you just don’t feel like putting in a lot of energy into cooking. Potato salad is easy to make. If you’ve already got the barbecue going, just throw on some extra potatoes and let them cook while your steaks are grilling. See, you’re already saving time and energy!
- 4 medium russet potatoes, cooked and diced
- ¾ cup mayonnaise
- 2 tbsp mustard
- ½ tsp salt
- 1 tsp garlic salt
- ½ tsp pepper
- 2 celery stalks
- 5 green onion stalks
- 6 hard boiled eggs
Boil or barbecue peeled potatoes until done. Cool to room temperature, then dice. Place potatoes into a large bowl. Add mustard, salt, garlic salt, and pepper. Mix lightly. Add in chopped celery, green onion and eggs. Mix again. Put into serving dish, sprinkle paprika on top and serve immediately.
