Warm days and beautiful weather are right around the corner. It’s time to slowly start waking up from hibernation and fluff up the social life once again. Brunch is always a great way to spend time cooking and entertaining with friends and loved ones, and an easy transition into the lighter summer foods. As the days get brighter and warmer try celebrating with this light and fluffy French Toast recipe.
- 4-6 butter croissants – sliced in half
- 2-3 large eggs
- 1 tablespoon cream
- 1/4 teaspoon ground cinnamon
- pinch of nutmeg (optional)
- pinch of cayenne (optional)
- 1 tablespoon butter
In a shallow dish–pie or casserole dishes work well–whisk together the eggs, cream, and spices. Melt the butter in a saucepan over medium heat. Submerge the croissant-halves in the egg mixture, one at a time, then transfer them over to the saucepan. Check to see if they have browned by lifting the edge up with the spatula. Flip when they are a golden brown. Serve right away, or keep them in a dish in the oven until you’re ready to serve them.
Pairs well with mimosas and blueberry compote.
