Salad Bites The season of salads has arrived, and with full-force. Dust off those lawn chairs, fill up the pools, lather on that SPF and enjoy some summer tastes. Mix it up with this sweet and savory salad. Finger foods are the way of the future. Make a plate of these salad bites and bring them to the next big pool party or BBQ, or serve them up at home, pack them for lunch. They’re good anytime. Here’s what you’re going to need:

Salad:

  • 5-8 Roma tomatoes – seeded and diced
  • Seeds of 1 pomegranate
  • 1 Asian pear – diced
  • 3/4 cup feta cheese – cubed

Dressing:

  • 1 tablespoon red wine vinegar.
  • 1 tablespoon olive oil.
  • Dill weed, white pepper, and salt to taste.

Presentation:

  • 2 Belgian endives.

In a large bowl mix together the tomatoes, pomegranate seeds, Asian pear, and feta cheese. In a separate bowl whisk together the vinegar, oil, and spices. Pour dressing over salad and toss. Carefully peel the leaves off the endive – these will be the serving cups to hold the salad. Spoon the tossed salad into the endive “cups”. Arrange on a large serving plate.
