Summer is busy, everyone knows it. It’s also time to keep an eye on those decadent comfort foods and desserts. Here’s a recipe that brings together a homey baked apple pie flavour and light summer fare. When pressed for time, baked apples make a quick and delicious dessert. Stuffed apples are easy to prepare and take no time to throw together.
- 1 medium Granny Smith apple
- Handful of blueberries (fresh are best but frozen ones work too)
- 1 tsp lemon juice
- 1/4 teaspoon cinnamon
- pinch of cardamom
- 1 tsp brown sugar
Preheat oven to 375ºF. In a small bowl toss the blueberries, lemon juice, and spices together. Slice off the very top of the apple. Core the apple with a melon baller to make a cup-shape. Fill the apple with the blueberry mix and gently place the brown sugar on top of the apple. Bake the apple in a glass casserole dish in the middle of the oven for 15-20 minutes, until the sugar has browned.
