Cedar plank salmon with lavender Cedar plank salmon with lavender The flowers of summer are in full bloom, it’s time to get outside and smell the roses. Blossoms everywhere and a few of them are great additions to the kitchen spice cupboard. Cedar plank salmon is a great way to turn a regular salmon dish into a summer hit, simply by adding a lavender rub and cooking it on a cedar plank. This can be done on the BBQ or in the oven. The cedar adds a subtle smoke flavour and the lavender ties it all together.

  • 1 fresh, wild sockeye salmon fillet (150g portion)
  • ½ tsp fresh lavender
  • 1 tsp salt
  • 1 tbs extra virgin olive oil
  • juice of half a lemon
  • 1-2 lemon slices

BBQ Directions: Soak the cedar plank in water for at least 2 hours and up to 12. Place the salmon on the plank, skin side down. In a small bowl, stir together the olive oil, lavender, and lemon juice. Spoon the mixture over the salmon so it is fully coated. Season with salt and lemon slices. Place plank on grill over medium-high heat. Brush salmon with any remaining lavender mixture. Cook for 20-30 minutes on the grill, until the fillet can be flaked with a fork.

Oven Directions: Soak the cedar plank in water for at least 2 hours and up to 12. Preheat the oven to 350 degrees F (165 degrees C). Place the salmon on the plank, skin side down. In a small bowl, stir together the olive oil, lavender, and lemon juice. Spoon the mixture over the salmon so it is fully coated. Season with salt and lemon slices. Bake for 20-30 minutes in the preheated oven, until the fillet can be flaked with a fork.
