Boozey pancakes Boozey Pancakes with bourbonWeekends are for brunch and who doesn’t like a little booze with their breakfast? These hearty pancakes are packed with flavour and will have guests drooling for more. Great for breakfast in bed, hosting a brunch, or making a big batch to freeze for the week.

Ingredients (serves 2):

  • 3/4 cups whole wheat flour
  • 1/2 cup quick cooking oats
  • 1/2 cup chopped walnuts
  • 1 tbsp brown sugar
  • 1/2 tsp baking soda
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 3/4 cup buttermilk
  • 1 tsp pure vanilla extract
  • 2 tbsp melted butter
  • 1 1/2 oz bourbon
  • 1/2 tsp cinnamon

In a large bowl mix together the flour, walnuts, baking soda, baking powder, cinnamon, and salt. In a blender combine the oats, brown sugar, buttermilk, vanilla, bourbon, and melted butter. Blend until smooth. Fold the blended ingredients into the dry bowl. Add more buttermilk or flour as needed. Melt butter in a cast iron frying pan and cook on medium heat. Flip once. Serve with butter, maple syrup, or a mango/strawberry compote.
