As one of Canada’s most liberal cities, acceptance, tolerance and diversity are welcomed and celebrated, regardless of your age, race, religion, or sexual orientation. When it comes to food, chefs around the city pride themselves on East meets West fusion of flavours to come up with creative dishes that would please the palate of the most discerning foodie. Yes, Vancouver is a city where the unexpected comes together and the result in harmony. The same thing happens with this Vancouver Gin Fizz, a classic cocktail incorporating local ingredients, Canadian traditions, and Asian-inspired flavours, to make a refreshing summer beverage. Cheers Vancouver!

  • 2 oz Gin
  • Fresh Local Mint Leaves
  • 2 Dashes Bitters
  • 1 oz Fresh Squeezed Mandarin Juice
  • Club Soda
  • Maple Syrup

In a highball glass, gently muddle mint leaves and gin together. Strain gin into a pint glass filled with ice. Add bitters, juice and club soda. Stir gently. Add syrup to taste.
