Like a delicate herbal lemonade, the Lavender Lust cocktail is the ultimate drink on a hot sunny day. The botanical flavours from the gin, infused with the oils from the fresh sage and lavender syrup, meld together into a delightful cocktail, bursting with natural flavours.
- 2 oz Sage-Infused Gin
- ½ oz Lemon Juice
- ½ oz Lavender Syrup
Fill a mixing glass half full of ice. Add sage-infused gin, lemon juice and lavender syrup. Stir. Strain into an ice-filled highball glass. Top with club soda and garnish with a fresh piece of sage.
To make the sage-infused gin, rip 6-8 sage leaves in half and lightly pound with a muddler inside a clean jar. Fill the jar with gin and let the gin sit for a minimum of five hours (up to three days). Once the gin has infused, strain the gin into a sterilized container, removing all the sage leaves. Store sealed in the fridge for up to seven days.
To make lavender syrup, in a large sauce pan, add one cup of water and one cup of sugar. Add three tablespoons of dried lavender. Stir together. Slowly bring to a full boil. Strain into a sterilized glass jar and let cool. Store sealed in the fridge for up to seven days.
