Be anything but basic this harvest season with the Pumpkin Pie Cocktail. October starts farmers market season, but also the time of year when you can celebrate by indulging in anything and everything pumpkin, including pumpkin protein shakes and pumpkin banana bread. Skip the spice and add some of everyone’s favorite over-sized fruit in everything you eat and drink. Including alcohol. The Pumpkin Pie Cocktail is a great nod to fall and the beginning of the pumpkin season.
- 1 ½ oz Canadian whisky
- 2 tsp pumpkin pie simple syrup
- club soda
Dip a mason jar in pumpkin pie simple syrup and then into cinnamon sugar. Fill mason jar with ice. Add Canadian whisky and pumpkin pie simple syrup. Stir. Top with club soda.
Pumpkin spice simple syrup:
- ½ cup water
- ½ cup Canadian maple syrup
- 2 tbsp pumpkin puree
- 1inch chopped and peeled fresh ginger
- ½ tsp vanilla extract
- ½ tsp ground cinnamon
- ¼ tsp ground nutmeg
- ¼ tsp ground cloves
- ¼ tsp allspice
Heat all ingredients in a saucepan over medium heat. Simmer for 5-8 minutes, stirring often. Strain syrup through a fine sieve into a clean glass container. Let cool. Store for up to 3 days in the refrigerator.
