You probably spent most of the summer watching what you ate as you wanted that perfect summer body right? No?! Don’t feel bad. Most people hope for the perfect beach body, and it doesn’t always happen. Not to worry, because now you won’t even care about being the ideal weight with a decadent dessert like chocolate macaroons. Indulge as much as you want, as just one of these small delights will make you feel like you’ve gone to a high end bake shop.
After researching, studies have found that for 2018, 45% of people who made New Years Resolutions in the US, included how they wanted to lose weight, and 73% of them have already failed. People all over the globe while trying to get into shape are too scared to treat themselves to sugar with the fear of gaining even more weight. Why be afraid? Why fear something that is so decadent, it will only give you pleasure. Who wouldn’t prefer a delicious chocolate treat over sex now-a-days?
The following recipe will make roughly two and a half dozen macaroons. Don’t forget to preheat your oven to 350 degrees so it’s hot before putting in your tins. Depending on how hot your oven is, this should take 20-25 minutes. Look in the oven through the oven door window around the 15 minute mark to check. The edges should be a beautiful golden brown.
What you’ll need:
- 2 cups sweetened coconut flakes
- 1/2 cut condensed milk
- 1/2 tsp vanilla extract
- 2 egg whites
- Pinch of salt
- 1/4 cup cocoa
- 1 package milk chocolate chips
Use a non-stick mini muffin tin for best results. Lightly grease the insides with pam, butter, or even coconut oil. Do not over grease the tins. Starting with the coconut flakes, add all of the ingredients except the egg whites and salt, in a large mixing bowl. Using a baking silicon spatula, mix everything together well. Use a separate mixer to beat the egg whites and salt until stiff peaks appear. Add that to the rest. It may appear to be a bit runny, but don’t fret. Scoop with a teaspoon to fill the mini muffin tins till it’s reached the top, but not over flowing. Place a cherry, red or green on top. You are now ready for the oven.
Decorating is probably the best part while offering lots of fun. Double boil the chocolate, then you can dip the cooled off macaroons, and place on parchment paper. Once all macaroons are dipped in the melted chocolate (just dip the bottoms), you can drizzle with more melted chocolate. Depending on if you are making these for a party, or themed occasion, you can use sprinkles to match.
