The Clover Club cocktail has its roots in the 1800s. The pre-prohibition classic makes a trifecta of flavors due to the raspberry, gin, and lemon. The berries mix perfectly with the gin’s botanicals, and the egg white will mix lusciously and create a creamy finish in the mouth. Any gin will work to create the delicious flavors of the clover club, but the flavors are accentuated with a good London dry gin.
The drink is perfect for the upcoming winter. The underlying flavors of pine, purple flowers, and warming spices make it a perfect option for a cold night. The drinking is refreshing and has a bit of a backbone. If you prefer to avoid excess sugar, you can replace the raspberry syrup with fresh raspberries. Upon adding them into your mixer and giving them a good shake, it will extract the juices from the berries.
- 2 oz gin
- ½ oz fresh lemon juice
- ½ oz raspberry syrup
- 1 egg white
Shake ingredients with ice. Strain into a chilled coupe glass. Garnish with fresh raspberries.
