St. Patricks’s Day is one of those holidays where the goal is to drink, and eat plenty of hardy, delicious food, and maybe get a little lucky!
The Luck of the Irish cocktail is the perfect kickoff for any pub crawls you and your crew may have planned! Before you head out though, be sure to eat plenty! Not sure what to prepare for your St. Paddy’s Day brunch? Here are five delicious, Irish dishes!
- The Irish Breakfast – A classic! It’s a very hearty meal and it will stick with you for quite a while, not for the light eaters! It’s a hefty plate of eggs, bacon, mushrooms, and tomatoes. Paired off with Irish Soda bread, it will keep you full and is a great idea if you want to save money on food while you’re out! (Don’t ever drink on an empty stomach!)
- Corned Beef Hash – Another staple of Irish dishes, corned beef hash is warm and comforting. Its main proponents being potatoes and corned beef, it tastes amazing when topped off with a fried egg! While it’s perfect for breakfast or brunch, this meal is perfect any time of day!
- Boxty – Of course we would include another potato-based dish! Boxty is a fabulous potato pancake that is easy to prepare and goes well with just about everything! They’re crispy on the outside, but warm and soft on the inside.
- Green Eggs and Ham – Well, kind of! It may not be the bright green version we see in Dr. Seuss, but a good egg scramble with plenty of kale and spinach mixed in is delicious and on theme! It also has a delicious slice of ham on the side and is perfect for lighter eaters.
All these meals are easy to prepare, and there are tons of recipes out there. It’s easy to make substitutes if you have any dietary restrictions or allergies and will keep you full and ready for a fun night out. The orange juice mixed into the Luck of the Irish cocktail really pulls it all together. (Think of it as an…Irish Mimosa!) Perfect for brunches, pregaming, or having a nice quiet dinner at home. Here’s how to make this drink:
- 1 oz Gin
- 2 oz Blue Curacao
- 2 oz Orange Juice
Fill a hurricane glass full of ice. Pour in gin and curacao. Add orange juice. Stir and serve.
