The term ‘bee’s knees’ dates back to the roaring 20’s, and was slang for ‘the best’. The post-war era was filled with optimism, innovation, and fun. Jazz music, flapper dresses, and men’s fitted suits were all the rage. It was also the time of prohibition. Bartenders had to get creative with ingredients like citrus and honey to mask the taste and smell of bootlegged, bathtub gin. Today’s gins are more rich, robust, and bursting with aromatics and the bee’s knees has returned in popularity in many bars. Mixologists honour the time-bound tradition of the four base ingredients, but all their own personal touch for added flare, style, and a twist. Here’s how to make a classic bee’s knees cocktail:
- 2 oz Gin
- ¾ oz Lemon Juice
- ¾ oz Honey Syrup
Pour all ingredients into a cocktail shaker filled with ice. Shake. Pour into a martini glass. Garnish with a lemon twist.
