Cucumber Tom Collins They say the classics are the classics for a reason and the Tom Collins is certainly no exception. Having graced our cocktail lists for almost 150 years, this old school American classic has never diminished in popularity. Combined with the perfect subtle freshness of the cucumber and the sweet twist of elderflower this Cucumber Tom Collins will go down a treat at any spring fling or garden party, cocktail afternoon or simply served alongside a good catch up with an old friend. A fresh take on a comforting classic.

  • 2 oz gin
  • 1 oz elderflower liqueur
  • 3 slices fresh cucumber
  • Splash of club soda

Muddle cucumber in the bottom of a shaker. Add ice, gin and elderflower liqueur. Stir. Strain into a collins glass filled with fresh ice. Top with club soda.
