Despite Vodka’s popularity with drinkers in North America, not many cocktails feature the liquor. Even with its long history, it’s not until the Cold War that Vodka started making appearances in cocktails such as the classic Moscow Mule.
History aside, the Gilded Cage cocktail stimulates the senses with its unique flavours. The Vodka’s flavours stand out without drowning in the other flavours that include egg white, honey and lemon.
In many ways, the Gilded cage demonstrates the versatility of the egg white, which gives the cocktail a frothy yet delicious layer at the top. However, you must prepare it right; otherwise, the egg white might leave the proverbial egg on your face.
When mixing the ingredients, shake very hard to help build up the emulsion, and leave plenty of space on your glass for the frothiness (espuma). It tends to flow out of the strainer when you finish pouring.
Honey syrup rounds out the lemon taste giving you an element of depth alongside the grapefruit bitters.
Ingredients
- 2 oz Stoli Premium
- ¾ oz lemon juice
- ¾ oz honey syrup
- 4 drops grapefruit bitters
- 1 egg white
Add all ingredients to a shaker filled with ice. Shake well—strain into a coupe glass. Garnish with a twist of grapefruit peel.
