Ingredients
- 3 oz rum
- 1 ½ oz spiced pear simple syrup
- ½ oz fresh lemon juice
Add ingredients to a shaker filled with ice. Shake. Strain into a cocktail glass rimmed with cinnamon sugar. Garnish with a bruleed pear.
Spiced pear simple syrup:
- 1 pear, peeled and cut into slices
- 2 cinnamon sticks
- 4 whole cloves
- ¼ cup sugar
- 1 cup water
Add ingredients to a saucepan. Simmer for five minutes. Strain the syrup through a strainer into a clean jar. Set aside to cool. Refrigerate for up to one week.
Brulee pear:
Sprinkle 1 tablespoon of sugar on a pear slice. Use a food-grade kitchen torch to melt the sugar. Cool completely.
